Culinary Resurgence!

in
I've been cooking again. I always tell people that I don't hate cooking, I just hate cooking for myself. Well in the last few weeks I've been dusting off the old epicurean skills to provide myself with something palatable

Here's a Chickpea curry with Chapatis on the far burner

And here we have Palak Paneer with tofu because I was too lazy to go around and try to find some Paneer. I'll have to try this one again. Even though it tasted quite acceptable it wasn't the right colour.

Also I've had some luck with Moong Dal and Aloo Parathas as well. You might ask why all these dishes seem to be Indian in origin. There are 3 reasons:
  1. I know the recipes by heart so it saves me from actually reading anything
  2. I usually stock these ingredients
  3. Indian food is seriously tasty!

Oh, and related to India I finally found a place that sells cheap coconuts ($1.25 each versus the $0.25 I paid in rupees)

Since I don't have a machete (nor should I ever be allowed to own such a thing) here's my over-technical production to get at the goopy delicious coconut flesh once the tasty water has been drained out.

Last week I made some whole wheat bread that turned out quite nicely too. One loaf seems to last about a week and I find that I'm eating the last piece just as it's getting stale.

By keeping the recipe sizes small I can cook a tiny meal every day and have all the relaxing and healthy benefits of eating at home without the hassles of eating the same thing for 10 days in a row.
